Dash of Color and Spice

Blood Orange Ricotta Cookies

March 31, 2021

Four blood orange ricotta cookies with pink glaze. Slice of blood orange.

These Blood Orange Ricotta Cookies are the most perfect mix of cake and cookie. They are so soft and the glaze on top is the perfect touch of sweet and tangy. These cookies are slightly adapted from my favorite Lemon Ricotta Cookie recipe by Giada De Laurentiis found here. The swap from lemon to blood orange makes for the most gorgeous pink glaze!

Birria de Res (Beef Birria)

March 19, 2021

White bowl with birria de res (beef birria) topped with cilantro, onion, and salsa. Second bowl and tortillas in background.

This delicious Mexican stew, Birria de Res (Beef Birria), is cooked in a broth that is full of spices, flavorful, and comforting. It is topped with fresh chopped onion and cilantro, a spicy salsa of choice, and served with homemade corn tortillas. Within the broth is a sauce made from dried chiles, herbs, and aromatics. It is all a labor of love and not meant to be a quick weeknight meal but that is exactly what makes this so special. The time and love put into this dish makes it absolutely worth it. Oh and, of course, the insane flavors and tasty stew that comes out of it all is more than worth it.

Caldo de Res (Mexican Beef Soup)

January 29, 2021

Blue bowl with Caldo de Res with zucchini, squash, corn, carrots, and beef. Small bowl of rice in background

This caldo de res, (Mexican beef soup), is seriously one of the most comforting soups ever. It probably has to do a lot with the fact that it was a staple in our house growing up and was always something I looked forward to. To this day my abuelita Socorro makes THE BEST caldo de res and it always is so dang good for the soul. It is full of veggies and flavored by a delicious beef broth made from cooking the beef in water before adding all the veggies. It’s hearty but healthy and, let me me be real, perfect with a side of Mexican rice.

Chile Colorado

January 22, 2021

Large white dutch oven with chile colorado, cilantro garnish

Chile Colorado translates to reddened chile and that is exactly what you think of when you hear this dish. A beautiful red chile sauce is made to accompany tender chunks of pork and left to simmer for the deepest, most delicious flavor infusion. The guajillo peppers used in this sauce create that beautiful red color while the ancho peppers help with the depth of flavor. Don’t be intimidated by the use of dried peppers, they truly are easy to work with and you can use them in so many recipes!

Arroz con Leche

January 15, 2021

White mugs with red rims filled with arroz con leche. Garnished with a cinnamon stick.

Arroz con leche is one of the most comforting and delicious foods, (or drink), I grew up with. It translates to rice with milk and that is exactly what it is. Think of it as a Mexican rice pudding that is very simple but so satisfying. Growing up, my mom would make this arroz con leche in a way that would make it easy for us to drink and eat the rice. Just like many other dishes in Mexican cuisine, arroz con leche can be very different depending on where your family is from. Also, arroz con leche is not just Mexican but there are various other Latin countries that enjoy their own versions of it as well.

Instant Pot Lasagna Soup

January 13, 2021

Two bowls of instant pot lasagna soup on spotted plates. Parsley garnish. Spoons next to bowls

Instant pot lasagna soup is exactly what you would think of when you say it. A hearty soup with all the components of a delicious lasagna deconstructed and turned into a soup. As if lasagna wasn’t already comforting enough, right?! My favorite part about the soup is the delicious ricotta-based cheese mixture that you dollop on top of the soup. The warmth from the soup helps it melt right in and make it extra creamy and delicious!

Capirotada (Mexican Bread Pudding)

December 21, 2020

Capirotada, mexican bread pudding, in a white dish. Topped with raisins, coconut, and pecans.

Capirotada is a traditional Mexican bread pudding typically served during lent. However, my mami made it around the holidays and a lot of times it was our Christmas dessert. It was always perfect with a nice little cafecito, (coffee), or a glass of milk. This Capirotada will forever and always remind me of my mami. It’s amazing how the smells of the cinnamon infusing in the syrup and the first bite of this dessert can bring back so many memories. I live for the recipes and dishes that take me back to my childhood and make me think back to so many great times spent with my family.

Apple Cider Margarita

November 27, 2020

This Apple Cider Margarita is the perfect cocktail this holiday season. Really, it’s good for ANY season if you ask me! Made with only 3 simple ingredients there is really no excuse for you not to make this. It is great for entertaining, holiday meals, or just a regular ol’ Friday!

Apple cider margarita with apple slice and cinnamon stick garnish. Apple on side

Apple cider is one of those things that automatically make you think of the holidays. It reminds me of going to an orchard and sipping on some hot apple cider while enjoying a delicious apple cider donut. Who doesn’t like an apple cider donut?! My favorite kind of apple cider is the spiced kind. There’s something so welcoming and satisfying about the warmness that comes from the cinnamon and spices.
