Bacon Goat Cheese Burgers with Caramelized Onions

If there is something we love in our household it is goat cheese. These Bacon Goat Cheese Burgers with Caramelized Onions are seriously so good!! It starts with the most perfectly seasoned and flavorful burgers. They’re then topped with a layer of goat cheese, some crispy bacon, and perfectly caramelized onions. You know me though, I have to add some grilled jalapenos for a little kick. Completely optional but highly recommended. The goat cheese and caramelized onions take these burgers to the next level. Think a good pub burger but kind of fancy, maybe even bougie? The thing is, these are no ordinary caramelized onions. No way, Jose! They are caramelized with a but of balsamic vinegar for a deeper, more intense flavor. Do it, trust me, it’s worth it.

These Quesabirria Tacos (Birria Quesadillas) have been a pandemic sensation! Everywhere you look you can find quesabirria tacos which are a blend of beef birria tacos and quesadillas. These are the perfect dish to make with birria leftovers and I highly recommend you use by birria recipe found here. Birria is a little bit of a labor of love but 100% worth it. The flavors from the dried peppers, herbs, and spices used to make the birria are so complex and make for the perfect dipping sauce, or consomé. Yes, you absolutely need to dip these tacos in the sauce, it’s what makes these quesabirria tacos shine!

This Blackberry Bourbon Smash is the perfect drink for this summer. The muddled blackberries give this drink the perfect beautiful pink/purple color. There’s a little lime juice and mint muddled in as well for a slight tang and fresh flavor. The beauty of it is that you can control how sweet you want it a couple of different ways. Add in your favorite sweetener, whether that’s simple syrup, agave, or others, and use the drink topper of choice. What do I mean by drink topper?? After all the ingredients are muddled and shaken to incorporate all the flavors, it gets poured into a glass and topped with club soda, tonic water, ginger beer, or sparkling water. See? So incredibly versatile but always thirst quenching and delicious!

Carne Asada is really popular in Mexico when you want to gather with family and friends and make a huge and delicious meal. Carne Asada translates to grilled meat and when someone says, “vamos a hacer una carne asada”, or “let’s make a carne asada”, it means let’s have a cookout or a bbq. Traditionally this involves some kind of marinated steak, the Carne Asada, amongst various other meats, sausage, peppers, onions, and more. You will always find this carne asada, tortillas, homemade salsa, and all the sides you want to make a phenomenal authentic Mexican meal.

This Thai Lemongrass Curry is so incredibly flavorful and easy to make. You will seriously want to pour the curry sauce all over everything, trust me. The lemongrass absolutely makes this dish and takes it to the next level. The idea came from a delicious curry sauce I had at one of my favorite restaurants. I love lemongrass anything and as soon as I saw it in the ingredients, I had to try it. Holy moly, it was heaven!

If you are looking for a super easy and flavorful Authentic Mexican Rice, look no further. Not only is this recipe easy but it requires only 4 major ingredients with a couple of additional optional ingredients. I know people are intimidated by making Mexican rice but I promise it’s so simple! In fact, it was one of the first dishes my mami taught me to make and soon it became the dish I was in charge of for our meals. This rice always made an appearance at Sunday dinners at my abuelita’s, (grandma’s), and it will forever bring the best memories. It took me lots of trial and error to perfect my Mexican rice. By perfect I mean make it as good as I possibly can but not just like grandma’s because, let’s be real, that takes a special touch!

This delicious Mexican stew, Birria de Res (Beef Birria), is cooked in a broth that is full of spices, flavorful, and comforting. It is topped with fresh chopped onion and cilantro, a spicy salsa of choice, and served with homemade corn tortillas. Within the broth is a sauce made from dried chiles, herbs, and aromatics. It is all a labor of love and not meant to be a quick weeknight meal but that is exactly what makes this so special. The time and love put into this dish makes it absolutely worth it. Oh and, of course, the insane flavors and tasty stew that comes out of it all is more than worth it.
