
This Chicken Chile Verde, or Salsa Verde Chicken, (you call it what you want), is so easy to make and so flavorful. I 100% recommend you make this with homemade Salsa Verde. The nice thing about this recipe is that you can make this in the Instant Pot or slow cooker and have lunch or dinner for days. Working full-time I always need recipes that will make batches for the week so I can just grab it and go for lunch or having something prepped and ready for dinner. This Chicken Chile Verde is perfect for meal prep or batch prep for the week and reheats well.
Another great thing about this recipe? Endless possibilities to use the chicken. We like to make soft chicken tacos, flautas, or tostadas with the chicken. While on Whole30 I usually eat the chicken on top of lettuce with roasted veggies and salsa on top. It makes for great taco bowls, perfect for nachos, and so much more! Don’t be intimidated about making your own salsa for this. It is so easy to make and it makes all the difference in the world as far as flavor goes. I always recommend roasting the veggies for the salsa because it adds so much depth to the flavor but you can always boil them too. Either way you will get a delicious salsa you will want to make over and over again.

Making this Chicken Chile Verde is incredibly easy once you have the salsa made, or you can even make it with store-bough salsa, (I won’t be upset you didn’t make your own 🙂 ). I like to add some chopped onions to the Instant Pot or slow cooker along with the chicken breasts and salsa verde. That’s all it takes, three ingredients and your cooking appliance. Choose to cook it low and slow while you’re at work in the slow cooker or make a quick 8 minute Chicken Chile Verde in the Instant Pot. Chicken Chile Verde
Ingredients
- 2 chicken breasts
- 2 cups salsa verde homemade* or store bought
- ¼ onion chopped
Instructions
Instant Pot
- Place all ingredients in Instant Pot. Set to cook on high pressure and set time for 8 minutes.
- When it is complete manually release pressure.
Slow Cooker
- Place all ingredients in crockpot and cook on high for 4 hours or low for 6-8 hours.
