Growing up my mom would make chorizo con papas, or chorizo with potatoes, and we would have it with eggs for breakfast or as burritos for lunch. It’s really one of those feel-good meals that always brings back memories and makes my heart super happy!

I think everyone that knows about chorizo con papas immediately thinks of breakfast but it can be used for all kinds of goods! My mami always made it with potatoes to have on hand for burritos, tacos, or even just on its own with some delicious salsa and homemade tortillas. It is absolutely perfect to make for meal prep and have on hand for the week.
Whole30 talk here: this is the perfect stuffing for my breakfast egg enchiladas, breakfast stuffed peppers, or makes a great topping for a salad. I would also highly suggest this as a stuffing for my chiles rellenos, you seriously will not regret it! Speaking of Whole30, make sure your chorizo is compliant by checking the ingredients. A couple of compliant chorizo brands that I love are Persons Farms and Mulay Sausage. Another great way to get compliant chorizo is checking out your local grocery stores or butcher shops and just ask about the ingredients to ensure it is compliant. Better yet, make your own chorizo! There are various ways to make this delicious combo but I highly suggest roasting your potatoes while you cook the chorizo. There’s something about the texture and flavor of the potatoes roasted in the oven that brings it to a whole new level. You can certainly just pan fry the potatoes with a little oil or cook them in the fat rendered by the chorizo.
Chorizo con Papas
Ingredients
- 1 lb compliant chorizo
- 2 large potatoes cut into cubes
Roasted Veggies (optional)
- 1 red bell pepper sliced
- 1 green bell pepper sliced
- 1 medium onion sliced
- 1 jalapeno sliced
- s&p to taste
Instructions
- Preheat oven to 400°
- Place potatoes on a lined baking sheet, drizzle with olive oil, and season with s&p.
- Roast potatoes for 20 minutes until tender.
- While potatoes are roasting heat skillet or pan on medium heat and add chorizo.
- Break the chorizo apart and let it cook thoroughly for 20 minutes.
- Drain any extra fat from the chorizo and add the potatoes. Gently mix and cook for additional 5 minutes.
Roasted Veggies (optional)
- After the potatoes have roasted, add veggies to same pan.
- Drizzle with olive oil and add s&p.
- Roast for 20 minutes and set aside.
