
This is seriously one of the easiest and quickest soups you’ll ever make! Best thing about this Sausage Spinach and Gnocchi soup, (besides the delicious flavor), is the fact that it’s a 5-ingredient recipe. Yup, 5 ingredients, easy, and delicious? Win, win, win! Sometimes after a long day of work I want something comforting and easy and this recipe fits right in. The “hardest” part is cooking the sausage so if that’s about as complicated as it gets for dinner, I’d say we are good. The cooked sausage is what brings the flavor to a whole new level because you’re going to want to make sure you use the same pot to cook it all in. Oh, did I forget to mention it’s also a one-pot meal? Seriously so convenient and simple.
Let’s talk about the 5 simple ingredients you’ll need:
-Pre-made Gnocchi. Use packaged gnocchi found in the pasta isle or use frozen gnocchi.
-Italian Sausage. I like to use hot Italian sausage from a local company but use spice level desired. I recommend using loose Italian sausage for convenience.
-Canned Diced Tomatoes. Try it with fire roasted diced tomatoes for extra flavor but any canned tomato will work. Use crushed if you prefer.
-Spinach. I have only used fresh spinach for this but I’m sure you could use frozen spinach of that’s all you have on hand.
-Chicken Broth. If you use regular sodium chicken broth adjust salt to accommodate this. I tend to use low sodium chicken broth to control the salt myself. Bone broth is also a great alternative for extra collagen and protein.

Sausage Spinach and Gnocchi Soup
Ingredients
- 1 lb Italian sausage
- 1 (16 oz) pkg gnocchi
- 1 (14 oz) can diced tomatoes
- 2 cups spinach chopped
- 8 cups chicken broth 2 (32oz) cartons
- ½ tbsp salt start with less if not using reduced-sodium broth
Instructions
Stove Top
- In a large pot or dutch oven brown Italian sausage over medium heat.
- Once the sausage is browned add the rest of the ingredients. Cover and simmer for 20 minutes until gnocchi is soft and warmed through.
- Serve and top with shredded parmesan.
Instant Pot
- Set instant pot to sauté mode and add Italian sausage. Brown Italian sausage and switch mode to pressure cook on high.
- Add the rest of the ingredients. Cover IP, set valve to seal, and set timer to 5 minutes.
- Carefully release pressure manually.
- Serve and top with shredded parmesan.
