
This Thai Lemongrass Curry is so incredibly flavorful and easy to make. You will seriously want to pour the curry sauce all over everything, trust me. The lemongrass absolutely makes this dish and takes it to the next level. The idea came from a delicious curry sauce I had at one of my favorite restaurants. I love lemongrass anything and as soon as I saw it in the ingredients, I had to try it. Holy moly, it was heaven!
The flavors in this Thai lemongrass curry are amazing and would be perfect on chicken, fish, or any seafood. You can keep this Whole30 compliant by serving it with more vegetables or cauli rice. Otherwise, it is perfect with a side of white or brown rice. This dish is great for meal prep to either prep all of the veggies and components ahead of time or to make the entire meal for the week. The leftovers reheat well and are perfect to take to work everyday.

Let’s talk about lemongrass. I know it can be a little hard to find but trust me, you want to use it. Typically you can find it in the produce section where all of the herbs are. It also comes in a paste form usually found in the produce section as well. The flavor the lemongrass give this curry is seriously one of a kind and I can’t recommend it enough! If using actual lemongrass all you have to do is add it to the sauce and let it simmer to infuse the flavors. If using the paste version you will just incorporate it into the sauce. I understand if lemongrass is too hard to come by so if that is the case, it will still be delicious without it.
This is, by all means, not authentic Thai Curry and I was inspired by someone else’s creation. However, it doesn’t mean that I didn’t have fun trying to recreate it! I obviously had to go back to my favorite restaurant to eat the dish again to get a feel of the flavors, ingredients, etc. You know, for research purposes of course. Thai food is one of my favorite cuisines and the flavors and ingredients that are used in this cuisine are so fun, different, and always work well together. You all know how much I love spice and this is definitely a type of cuisine that incorporates lots of spice and flavor into their dishes. Culinary geniuses, if you ask me.

The nice thing about this dish is how versatile it is. Feel free to add different kinds of vegetables, add jalapeños or other peppers for spice, adjust quantities of other ingredients, etc. I highly recommend you use plenty of aromatics, (onion, ginger, garlic), for lots of flavor and use full fat coconut milk for maximum richness!
Thai Lemongrass Curry
Ingredients
- 2 chicken breasts chopped
- ½ onion chopped
- 4 garlic cloves minced
- 1 tbsp olive oil
- salt
- 1 tbsp ginger minced
- 1 tbsp red curry paste
- 1 can coconut milk full-fat
- chicken broth
- lemongrass
- 2 carrots sliced
- 2 bell peppers sliced
- ½ pkg spinach
- lime
- cilantro stems removed and chopped
Instructions
- In a large pan over medium heat add oil. Once oil is hot, add chicken, onion, garlic, and salt. Cook until chicken is cooked through, about 10 minutes
- Add ginger, curry paste, coconut milk, broth, carrots, and lemongrass, Cover and leave to simmer for 10 minutes to soften carrots.
- Add bell peppers, spinach, and lime. Salt to taste if needed. Leave to simmer for 10 more minutes.
- Serve with rice, cauliflower rice, or additional veggies. Top with fresh chopped cilantro and lime.
