Thai Lemongrass Curry

A delicious and creamy curry sauce infused with lemongrass, rich from coconut milk

  • 2 chicken breasts chopped
  • ½ onion chopped
  • 4 garlic cloves minced
  • 1 tbsp olive oil
  • salt
  • 1 tbsp ginger minced
  • 1 tbsp red curry paste
  • 1 can coconut milk full-fat
  • chicken broth
  • lemongrass
  • 2 carrots sliced
  • 2 bell peppers sliced
  • ½ pkg spinach
  • lime
  • cilantro stems removed and chopped


  • In a large pan over medium heat add oil. Once oil is hot, add chicken, onion, garlic, and salt. Cook until chicken is cooked through, about 10 minutes
  • Add ginger, curry paste, coconut milk, broth, carrots, and lemongrass, Cover and leave to simmer for 10 minutes to soften carrots.
  • Add bell peppers, spinach, and lime. Salt to taste if needed. Leave to simmer for 10 more minutes.
  • Serve with rice, cauliflower rice, or additional veggies. Top with fresh chopped cilantro and lime.
