In a large pan over medium heat add oil. Once oil is hot, add chicken, onion, garlic, and salt. Cook until chicken is cooked through, about 10 minutes
Add ginger, curry paste, coconut milk, broth, carrots, and lemongrass, Cover and leave to simmer for 10 minutes to soften carrots.
Add bell peppers, spinach, and lime. Salt to taste if needed. Leave to simmer for 10 more minutes.
Serve with rice, cauliflower rice, or additional veggies. Top with fresh chopped cilantro and lime.
