Bacon Goat Cheese Burgers with Caramelized Onions

Burger Patties
- 2 lb ground beef
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp salt
- 1 tsp pepper
Balsamic Caramelized Onions
- 2 onions sliced
- ¼ cup balsamic vinegar
- ¼ tsp salt
- 2 tbsp olive oil
Burgers
- 6 burger patties
- 6 slices bacon cooked until crispy
- 1 (8 oz) goat cheese log softened at room temp
- 1 batch caramelized onions
- lettuce
- mayo
- 6 buns
Burger Patties
Preheat grill, griddle, or cast iron pan on high heat.
In a large bowl add all ingredients and with hands mix just until all spices thoroughly combined.
Divide the meat mixture into six even sections and form into patties. Don't forget to leave a thumbprint or indentation in the middle to prevent shrinking when cooking.
Cook burgers until desired doneness, about 3 minutes on each side for medium doneness. Add another minute to each side for more doneness. Use thermometer for best accuracy.
Balsamic Caramelized Onions
Preheat pan on medium heat. Add oil.
Add onions to hot pan and cook until softened.
Add balsamic vinegar and salt. Continue to cook, stirring every few minutes to ensure even cooking and no sticking. Onions will start to shrink and caramelize in about 15-20 minutes. Cook until all liquid has cooked off or to liking. To fully caramelize onions you will need to let them cook for at least 30 minutes.
